Turn your fast into a feast with these super simple vrat recipes

Often associated with the religious aspects, fasting is one gospel practice that symbolizes different things for different people. For some, it’s a kind of spiritual reflection, while some believe it to be an act of abstaining that leads to the attainment of divine grace. Whatever may be the connotation and people's belief behind observing fasts, there’s no denying the fact that in the most basic sense of the word, fasting simply implies taking control of our drives and in turn, our lives. And with the arrival of sacred Navratri, one of the biggest Hindu festivals celebrated twice a year, its once again time to ring in the festivities with some delicious fasting specific ‘Satvik’ recipes that are just as much, if not more, delicious than the greasy junk food we all seem to be so fond of. So, in the spirit of getting our ‘Fast On’, here are some of our favorite and super simple Navratri recipes that you can easily whip up at home.

1. Crispy Sabudana Vada

Ingredients:

  • 1 cup sago (sabudana)
  • 1/2 cup crushed peanuts
  • 3 pinches sendha namak (rock salt)
  • 1/4 tablespoon sugar
  • 1/2 tablespoon cumin seeds
  • 2 mashed, boiled potatoes
  • 2 pinches chili powder
  • 1/2 tablespoon lemon juice
  • 2 tablespoon ghee
  • 2 raisins- optional

Instructions:

  • To prepare this Navratri recipe, take a bowl and add sago and water to it. Soak for at least 2 hrs or till it gets fluffy. Once it's done, drain the excess water and transfer the sago into a bowl. Keep it aside for 2-3 hours.
  • Take another bowl and add 2 boiled potatoes to it. Peel and mash them well using your hands. Meanwhile, Roast 1/2 cup of groundnuts in a pan over medium flame. Once done, transfer the nuts to a bowl keep them aside. Now add 1 tsp oil in the same pan and heat it over moderate flame. Add cumin and raisin to it. Saute for few seconds and then turn off the flame.
  • Mix the sago, boiled potatoes, and crushed groundnuts together in a bowl. Add salt, lemon juice, and sugar to the mixture. Pour the cumin-raisin mixture into this bowl and mix well.
  • Take portions from the mixture and form vadas with oiled palms. Heat an appam pan over a low flame. Place these vadas in the compartments of the pan and allow them to cook for 10 minutes on slow heat. Turn and cook to give it a nice golden-brown color. Serve the sabudana vada hot with coriander or mint chutney.

2.  Kuttu (Buckwheat Flour) Dosa

Ingredients:
  • 3 potatoes, boiled
  • Ghee (for frying)
  • Rock Salt to taste 
  • 1 tsp red chili powder
  • 1/2 tsp ginger, chopped
  • 5 tbsp buckwheat flour kuttu)
  • 2 tbsp arbi (colocasia), boiled
  • Salt to taste salt
  • 1/2 tsp ajwain (carom seeds)
  • 1 tsp green chilies, chopped

Instructions:

  • Heat ghee in a pan, crush the potatoes into it, and mix in the rest of the ingredients.
  • Toss the potato mixture around for a few minutes till it becomes light brown in color. Take it out and keep it aside.
  • In a bowl, mash the Arbi and mix it with the flour and salt. Add some water and mix well.
  • Add the Ajwain, red chili powder, ginger, and green chilies and mix again.
  • Keep adding water and stirring in one direction till the batter turns into a smooth flowing consistency.
  • Heat a flat pan, dab a bit of ghee on it, pour a ladle of the batter, and spread it. Cook for a few minutes and spread more ghee around the edges to make it crisp.
  • Now flip it over and cook the other side. Put some filling on top and fold the dosa over it.
  • Serve hot with mint and coconut chutney.
