Daryaganj cannot be seen as any other regular casual dining outlet that comes with its own theme and décor. Rather, it can be viewed as an attempt to reconnect with a glorious past of dining excesses as well as an undying entrepreneurial spirit. It is also a hat tip to Kundan Lal Jaggi, grandfather of one of the current owners Raghav Jaggi. The scion has teamed with restaurateur Amit Bagga to recreate the iconic dishes of Moti Mahal, a dining outlet started by Kundan Lal in 1947 with two other partners, when he migrated from Peshawar’s Gora Bazaar after partition. Though uprooted, the young refugee did not lack either resilience or strategic thinking, proved amply by the success of his restaurant, founded in the congested lanes of Daryaganj. Stories of his inventiveness abound. It is said that he once fed a group of ravenous refugees when they arrived at his restaurant when it was about to close for the day. Few pieces of Tandoori Chicken were all that he had in his meagre repertory but he figured out a smart way to stretch his modest stock. By conjuring up a gravy of desi ghee where fresh tomatoes were stewed till they collapsed, Kundan Lal created his version of the fabled 'Butter Chicken'. Today the dish finds a place in Daryaganj’s menu, as does his other specialities like 'Dal Makhani', 'Chicken Tikka', 'Tandoori Chicken' and 'Paneer Tikka'. But there are newer entries too, such as the 'Mutton Nargisi Kofta', fragrant orbs of minced meat encasing rich morsels of a chopped egg.
