DIY dishes with minimal Ingredients!

Stuck indoors owing to the Coronavirus pandemic, one is constantly hungry and yet, nutritious food is the need of the hour. Add to that, one has access to fewer ingredients and wants to cook simple dishes. Goan food need not always be seafood and meat. Here are two, simple Goan recipes, traditional and extremely nutritious too. These can be enjoyed for breakfast by the entire family or as evening snacks, as these are deeply satiating. Give these a shot.

Ragi Satva 

Ingredients

  • 1 cup Ragi (Nachni) 
  • 1 cup grated Coconut
  • 1 cup Jaggery
  • 2 tbsp Cashew nuts broken
  • ½ tsp Cardamom powder   
  • A pinch of salt

Method

  • Soak the Ragi in sufficient water overnight.
  • Meanwhile, grind the coconut with water till you get a smooth paste. Strain and keep the extracted Coconut Milk aside.
  • Grind the Ragi with enough water. Strain and extract the juice.
  • Cover and keep aside for 2 - 3 hours. Throw away the excess water that accumulates on top.
  • Mix together the Ragi juice, Coconut Milk and powdered Jaggery in a thick bottomed pan.
  • Cook on a low flame, stirring continuously. Once it starts thickening add Cashew nuts, Cardamom powder and salt and mix well.
  • Transfer the entire contents to a thick plate or thali, greased with ghee. Spread evenly.
  • Allow it to cool. Cut into pieces and enjoy or store in refrigerator.

Suji with grated cucumber and coconut milk

Ingredients

  • 1/2 cup Suji
  • 1 tbsp Ghee
  • 1.5 or 2 cups of Water
  • 1 cup grated Cucumber
  • 3 to 4 cups of Coconut Milk
  • 1/2 cup Jaggery
  • Chopped Cashew nuts
  • Chopped Coconut
  • Salt to taste

Method

  • In a pan, heat ghee, add Suji and roast till it emits an aroma.
  • Add water and cook till done.
  • Once the Suji is cooked, add grated Cucumber mix well cook for 2 minutes.
  • Add Coconut Milk, Jaggery, Cashew nuts, Coconut pieces and salt as per taste.
  • Mix well and serve hot.
