Are you craving some homemade dessert but lack the motivation or patience to embark upon an elaborate baking expedition? No problem as we have got you covered. Try these easy cookie recipes made with five ingredients or fewer. Perfect for that late afternoon snack, these quick to make cookies are sure to satisfy your sweet tooth and we can guarantee you already have the ingredients to whip up a fresh batch of at least one of these easy recipes.


1. Easy Chocolate Chip Cookies

Ingredients:

  • 3 cups all-purpose flour
  • ¾ cup brown sugar
  • 2 eggs
  • 1 cup butter, softened
  • 1 cup chocolate chips/chocolate bar pieces

Instructions:

  • Preheat oven to 175 degrees C.
  • Sift flour and brown sugar into a bowl; stir in eggs. Mix butter into flour mixture until dough is creamy; fold in chocolate chips/pieces.
  • Spoon dough onto a baking sheet, keeping them about 3 inches apart.
  • Bake in the preheated oven until slightly brown, 10 to 15 minutes. Remove carefully once done and let them cool.


2. Banana Oatmeal Raisin Cookies

Ingredients:

  • 1 ripe banana- mashed
  • 1/2 cup rolled oats
  • 1/4 cup raisins

Instructions:

  • Preheat the oven to 175 degrees C.
  • Combine all ingredients and stir until well-mixed.
  • Place rounded tablespoons of dough on an ungreased cookie sheet. Bake for 12-15 minutes, until browned.
  • Cool for 5 minutes on the pan, then move to a wire rack to cool completely.


3.  Chocolate Coconut & Gems Macaroons

Ingredients: 

  • 3 large eggs
  • 1/2 cup sugar
  • 400 grams coconut flakes
  • 1/2 cup Cadbury Gems 

Instructions:

  • Preheat the oven to 175 degrees C.
  • Line 2 baking sheets with parchment paper or use a nonstick baking pan. 
  • Stir together the egg whites, sugar and coconut in a large bowl until the coconut is evenly moistened. Gently fold in the Gems until they're just incorporated.
  • Scoop the prepared mixture onto the baking sheets/tray using a tablespoon. Bake for 20-22 minutes or until the coconut is golden brown and the cookies hold together. Allow the cookies to cool before removing them.


4. Meringue Cookies

Ingredients:

  • 3 egg whites
  • 3/4 cup superfine sugar
  • Pinch of salt3 egg whites
  • 3/4 cup superfine sugar
  • Pinch of salt

Instructions:

  • Preheat oven to 95 degrees Celcius. Line a cookie sheet with parchment paper or a nonstick silicone mat.
  • In a very clean and dry bowl whisk egg whites rapid until foamy. Add a pinch of salt and continue to whip until they triple in volume and hold soft peaks. Continue whipping while adding sugar, one tablespoon at a time, until the whites hold stiff peaks and look thick and glossy.
  • Using two spoons, dollop 2-1/2- to three-inch meringue cookie batter onto the baking sheet an inch apart.
  • Bake for 1 1/2 hours. The meringue is done when it appears crisp on the outside but remains white in color. Turn off the oven and crack the oven door, letting the meringue dry for several hours or overnight. 


5. Peanut Butter Cookies

Ingredients:

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  • Stir together 1 cup peanut butter, 1 cup sugar, 1 large egg, and 1 teaspoon vanilla extract in a large bowl until combined; shape dough into 1-inch balls.
  • Place balls 1 inch apart on ungreased baking tray, and flatten gently with tines of a fork.
  • Bake at 162 degrees C for 15 minutes or until golden brown. Remove carefully and let them cool.

A. Store at room temperature in an airtight container for several days.


Q3. Can I hand whisk the meringue cookie batter?
A. If you don't have an electric mixer or blender you can totally hand whisk the batter. but do make sure to whisk it rapidly and hold the bowl with your other arm to keep it still.
